Executive Chef

Executive Chef Michael Perez leads the culinary team at Colletta. With experience in high-end kitchens across Portland, Los Angeles, Hawaii, and Charleston, Chef Perez brings extensive expertise to the kitchen. His team produces house-made pastas, cheeses, and other handcrafted ingredients for a true from-scratch dining experience.

The menu features a variety of Italian dishes, including Neapolitan-style pizzas made with 00 flour and filtered water. Unique toppings include:
