The role of Sous Chef at The Mint Gaming Hall is an integral position focused on supporting the culinary leadership team while ensuring the smooth and efficient operation of the kitchen's back of house. This position calls for a dynamic professional who will work closely under the Room Chef to uphold food quality, maintain inventory and cost controls, and foster a culture of culinary excellence within the team. The Sous Chef is entrusted with tasks ranging from mentoring and training culinary staff to assisting with menu development and daily specials. This role demands a hands-on leader skilled in the art of culinary execution and team collaboration during high-volume service periods. The successful candidate will be responsible for ensuring all health and safety standards are rigorously met, maintaining a clean and sanitary work environment, and delivering BIG Service to both internal guests and patrons. Job Requirements
- Minimum of 2 years cook experience
- High school diploma or equivalent
- Must be 21 years of age or older
- Must pass all required pre-screening and background checks
- Internal candidates must have been in their current position for at least six months with no active disciplinary action
- Ability to work a variety of shifts including day, swing, late-night, weekend, and holiday shifts
- Must be able to obtain required work cards and non-gaming registration as required by local jurisdiction
- Ability to maintain safety and sanitation standards
- Ability to work independently and as part of a team
- Must comply with all legal and company regulations for the industry
- Physical ability to lift and carry up to 50 pounds and work in a noisy, fast-paced environment
Job Qualifications
- Minimum of 2 years cook experience
- Culinary degree preferred but not required
- High school diploma or equivalent
- Must be 21 years of age or older
- Ability to work various shift schedules including weekends and holidays
- Ability to obtain required work cards and non-gaming registration as per local jurisdiction
- Experience in mentoring and training culinary team members
- Strong communication skills and leadership abilities
- Knowledge of health department sanitation standards
- Ability to work under pressure in a fast-paced environment
Job Duties
- Support the Room Chef in food quality management and cost control
- Complete inventories and train back of house team members
- Participate in financial review and reporting
- Document and ensure consistency of recipes
- Train culinary team on recipes and monitor adherence
- Ensure compliance with kitchen operating procedures
- Provide leadership through training, mentoring, and counseling
- Assist in hiring and onboarding hourly staff
- Schedule staff and assist with payroll activities
- Communicate effectively with front of house management
- Lead food preparation and oversee service flow
- Manage daily prep sheets and support menu creations
- Monitor inventory and product quality
- Properly label and date all products
- Safely use kitchen equipment and cleaning products
- Deliver exceptional service to internal guests with professionalism
- Foster positive working relationships with managers, staff, and vendors
- Maintain safety and compliance with company policies
- Attend scheduled shifts and staff meetings
- Maintain personal professionalism and appearance
- Assist with new team member training and mentoring
- Report irregularities and maintain integrity in work
